CHARACTERISTICS

Name: Valpolicella Superiore Falezze DOC

Production zone: The Municipality of Mezzane di Sotto, locality Falezze

Vines: Corvinone 40%, Corvina 30%, Rondinella 15% and Oseleta 5%

Age of vineyards: 20-40 years

Ground: gravelly gravelly clay loam which is extremely calcareous and moderately alkaline, but in the deepest part of the soil there a sand clay loam texture is present.

Altitude: 200-250 metres above sea level.

Farming system: Pergola Veronese

Harvesting modalities: By hand on plateaux, repeated selection

Fermentation: The fermentation takes place in personally designed steel tanks. Vinification lasts about 20 days at a controlled temperature. The malolactic fermentation is carred out in wooden barrels .

Refinement: The refinement is carried out in new and second passage barrels of 500 L in French oak for a year and a half and a small part in stainless steel.

Yield: It takes over 2 kg of grapes to produce one bottle of wine.

 

ORGANOLEPTIC NOTES

Colour: Light ruby red in colour with fine structure.

Bouquet: Complex and intense scents, with hints of aromas of blackberries, blueberries, licorice and black pepper.

Taste: It has a very intense and persistent flavour, with hints of red and black fruit (plums, blackberries, blueberries, red and black currants), licorice, mint, orange, chocolate and nutmeg. This wine is dry, very warm, intense, soft, with good minerality and salinity which suggests the earth. It has notes of unobtrusive tannins and a clear structure. A harmonious wine ready to be enjoyed now or to remain a few years in the cellar and develop a clearer structure. Serving temperature 18 ° C.

To be served with: It goes well with red meat (such as steak and venison), poultry, lamb and pork and pork sausage, medium-aged cheeses, cold cuts like ham, salami and mortadella.
